Decaffeinated coffee is coffee from which caffeine has been removed, or its concentration reduced by about 97%. It is recommended as an alternative to regular coffee, especially for people with heart conditions or hypertension. It represents about 10% of global coffee consumption. It is available as ground coffee as well as instant coffee. One cup (240 ml) of decaffeinated coffee contains approximately 2–12 mg of caffeine, while a regular cup contains around 100 mg or more. The decaffeination process was patented by Ludwig Roselius in 1905.

Decaffeination processes:

• European process:
  The most common method. Unroasted beans are soaked in water and then washed with methylene chloride, which absorbs caffeine. The beans are then rinsed and dried again. The coffee retains its aroma and flavor, with only slight hints of chemical aftertaste.
• Swiss water process:
  A chemical-free method, but the resulting coffee is less aromatic and less intense. Beans are soaked in hot water and steam, and the extract is filtered through activated carbon filters. After caffeine removal, the beans are re-soaked to reabsorb flavor compounds. The downside is that essential oils and aromas are also partially removed.
