True Espresso:
True espresso has only one standard:

• It must have a beautiful creamy crema on top, a few millimeters thick.

• The color should be hazelnut-chocolate with reddish to tiger-like highlights. The color of the crema indicates the roasting and extraction process.

• The crema should be smooth, without large bubbles, and should return when stirred with a spoon.

• Aroma is another key aspect. When smelling an espresso, we first evaluate the intensity of the aroma, the roasting level, and then other fragrances. Proper espresso should have hints of chocolate, fruit, or flowers, depending on the coffee variety.
